Salty Waffles
Ingredients
- 75 g of blond or amber spent grain flour
- 175 g of wheat flour
- 125 g of butter
- 2 eggs
- 35 cl of liquid (water or milk)
- 100 g grated Comté
- 100 g of bacon
- 1/2 teaspoon baking powder
- Salt pepper
- Herbs (parsley)
Preparation
- Brown the bacon in the pan.
- In a terrine, mix the flours and make a well.
- Add egg yolks and salt.
- Dissolve the yeast in the liquid and add it little by little to the flour/egg mixture.
- Add the melted butter and mix.
- Add the bacon bits and the Comté.
- Incorporate the whipped egg whites.
- Bake the waffles normally in a waffle maker.
- Variations: Waffles will be softer with milk and crunchier with water. It is also possible to replace part of the liquid with a glass of dry white wine or beer! Leave room for your imagination, bacon and cheese can be replaced by many ingredients: dried tomatoes, seeds, etc.
