Salty Waffles

Ingredients

  • 75 g of blond or amber spent grain flour
  • 175 g of wheat flour
  • 125 g of butter
  • 2 eggs
  • 35 cl of liquid (water or milk)
  • 100 g grated Comté
  • 100 g of bacon
  • 1/2 teaspoon baking powder
  • Salt pepper
  • Herbs (parsley)

Preparation

  • Brown the bacon in the pan.
  • In a terrine, mix the flours and make a well.
  • Add egg yolks and salt.
  • Dissolve the yeast in the liquid and add it little by little to the flour/egg mixture.
  • Add the melted butter and mix.
  • Add the bacon bits and the Comté.
  • Incorporate the whipped egg whites.
  • Bake the waffles normally in a waffle maker.
  • Variations: Waffles will be softer with milk and crunchier with water. It is also possible to replace part of the liquid with a glass of dry white wine or beer! Leave room for your imagination, bacon and cheese can be replaced by many ingredients: dried tomatoes, seeds, etc.
