Pizza dough

Ingredients

  • 17 g of blond spent grain flour
  • 150 g of wheat flour
  • 3,3 g of fresh baker's yeast
  • 115 g of water
  • 2,6 g of salt
  • 5 g olive oil
  • Garnish: Tomato sauce, grated emmental cheese, goat cheese and mozzarella

Preparation

  • In a robot put all the ingredients except the water.
  • Start kneading, adding water little by little.
  • Knead for ten minutes.
  • Rest at room temperature between 1h30 and 3h: the dough should triple in volume.
  • Roll out the dough and garnish.
  • Bake for about 8 minutes at 230°C.
