Pizza dough
Ingredients
- 17 g of blond spent grain flour
- 150 g of wheat flour
- 3,3 g of fresh baker's yeast
- 115 g of water
- 2,6 g of salt
- 5 g olive oil
- Garnish: Tomato sauce, grated emmental cheese, goat cheese and mozzarella
Preparation
- In a robot put all the ingredients except the water.
- Start kneading, adding water little by little.
- Knead for ten minutes.
- Rest at room temperature between 1h30 and 3h: the dough should triple in volume.
- Roll out the dough and garnish.
- Bake for about 8 minutes at 230°C.
