Gluten-free bread

Ingredients (for a 500g loaf)

  • 60,5 g of blond spent grain flour
  • 66,5 g of rice flour
  • 50,1 g of chickpea flour
  • 23,5 g of cornstarch
  • 30 g of chia seeds
  • 8 g of guar gum
  • 5 g of salt
  • 6,5 g of fresh baker's yeast
  • 6,5 g of neutral oil
  • 244 g of water

Preparation

  • Rehydrate the yeast in a little lukewarm water.
  • Put the chia seeds in the remaining water.
  • Pour all the ingredients into a food processor.
  • Knead 5 min.
  • Form a dough and place it in a mold.
  • Let rise for about 2h30 at room temperature.
  • Bake for 20 minutes at 240°C in a humid oven.
