Fish & Chips
Ingredients for 4 persons
- 4 fillets of fresh cod (or other white fish)
- Salt and pepper
- Oil for frying
- 80 g of blond spent grain flour
- 20 g of wheat flour
- 1/2 teaspoon of baking powder
- 1 beer or sparkling water
Preparation
- Mix the flours and yeast with beer or sparkling water until you get a thick pancake batter consistency.
- Salt and pepper the fish.
- Flour the fish (with wheat flour) before plunging them into the batter to coat them well.
- Fry them in oil at about 170°C until they are golden brown (5 min).
- Place them on absorbent paper after removing them from the oil.
- Serve the dish with fries and tartar sauce
Ingredients for the tartar sauce
- 1 egg yolk
- 250 mL of oil
- 1 tablespoon of mustard
- 1 tablespoon of vinegar
- 1 shallot
- 2-3 pickles or capers
- Chopped chives
Preparation of tartar sauce
- Finely chop the chives, chop the shallot and gherkins.
- Beat the egg yolk, adding the oil in a trickle to make the mayonnaise rise.
- Then add the mustard, salt and pepper.
- Finish by adding the vinegar, chives, pickles and shallot.
