Fish & Chips

Ingredients for 4 persons

  • 4 fillets of fresh cod (or other white fish)
  • Salt and pepper
  • Oil for frying
  • 80 g of blond spent grain flour
  • 20 g of wheat flour
  • 1/2 teaspoon of baking powder
  • 1 beer or sparkling water

Preparation

  • Mix the flours and yeast with beer or sparkling water until you get a thick pancake batter consistency.
  • Salt and pepper the fish.
  • Flour the fish (with wheat flour) before plunging them into the batter to coat them well.
  • Fry them in oil at about 170°C until they are golden brown (5 min).
  • Place them on absorbent paper after removing them from the oil.
  • Serve the dish with fries and tartar sauce

Ingredients for the tartar sauce

  • 1 egg yolk
  • 250 mL of oil
  • 1 tablespoon of mustard
  • 1 tablespoon of vinegar
  • 1 shallot
  • 2-3 pickles or capers
  • Chopped chives

Preparation of tartar sauce

  • Finely chop the chives, chop the shallot and gherkins.
  • Beat the egg yolk, adding the oil in a trickle to make the mayonnaise rise.
  • Then add the mustard, salt and pepper.
  • Finish by adding the vinegar, chives, pickles and shallot.
