Crumb bread

Ingredients (for a slice of bread)

  • 40 g of blond spent grain flour
  • 360 g of T55 wheat flour
  • 130 g of milk
  • 130 g of water
  • 6 g of dry baker's yeast
  • 20 g of sugar
  • 40 g of butter
  • 8 g of salt

Preparation

  • Rehydrate the yeast in a little milk.
  • In a bowl add all the ingredients except the butter.
  • Knead for 5 mins at low speed, then again for 5 mins at higher speed, gradually adding the softened butter.
  • Leave the dough to rise for 30 minutes.
  • If necessary divide, make a flap and put in a mold.
  • Grow for 2½ to 3 hours with a 3/4 closed lid.
  • Bake for 40 minutes in an oven at 180°C with the lid closed.
