Crumb bread
Ingredients (for a slice of bread)
- 40 g of blond spent grain flour
- 360 g of T55 wheat flour
- 130 g of milk
- 130 g of water
- 6 g of dry baker's yeast
- 20 g of sugar
- 40 g of butter
- 8 g of salt
Preparation
- Rehydrate the yeast in a little milk.
- In a bowl add all the ingredients except the butter.
- Knead for 5 mins at low speed, then again for 5 mins at higher speed, gradually adding the softened butter.
- Leave the dough to rise for 30 minutes.
- If necessary divide, make a flap and put in a mold.
- Grow for 2½ to 3 hours with a 3/4 closed lid.
- Bake for 40 minutes in an oven at 180°C with the lid closed.
