Blinis
Ingredients
- 50 g of blond spent grain flour
- 100 g of wheat flour
- 2 eggs
- 20 cL of milk
- 10 g of baker's yeast
- Fat for cooking
- Salt, pepper, spices of your choice
Preparation
- Dissolve the yeast in two tablespoons of milk at room temperature.
- Mix the flours and make a well, add the egg yolks, the yeast and mix.
- Gradually add the remaining milk and season. Book 4 hours.
- Whisk the egg whites and fold them in gently.
- Cook in the pan. Flip over when the visible side begins to dry.
- Tip: serve with smoked salmon, tapenade, fromage frais, etc.
