Blinis

Ingredients

  • 50 g of blond spent grain flour
  • 100 g of wheat flour
  • 2 eggs
  • 20 cL of milk
  • 10 g of baker's yeast
  • Fat for cooking
  • Salt, pepper, spices of your choice

Preparation

  • Dissolve the yeast in two tablespoons of milk at room temperature.
  • Mix the flours and make a well, add the egg yolks, the yeast and mix.
  • Gradually add the remaining milk and season. Book 4 hours.
  • Whisk the egg whites and fold them in gently.
  • Cook in the pan. Flip over when the visible side begins to dry.
  • Tip: serve with smoked salmon, tapenade, fromage frais, etc.
