Banana bread à la farine de drêche, aux pépites de chocolat et à la banane

Banana Bread

Ingredients (for a 30x11 cake)

  • 90 g of blond spent grain flour
  • 210 g of wheat flour
  • 150 g of soft butter
  • 150 g of brown sugar
  • 2 eggs
  • 1 teaspoon baking soda
  • 1 packet of baking powder
  • 1/2 teaspoon of salt
  • 3 very ripe normal bananas
  • 150 ml of milk
  • 150 g of dark chocolate chips
  • 1 tablespoon of vanilla flavoring

Preparation

  • Preheat the oven to 160°C (convection heat), otherwise 180°C.
  • Butter and flour the cake tin.
  • In a bowl, combine the flours, baking soda, baking powder and salt.
  • Dice the butter. Mix it with the sugar and whisk until the mixture whitens.
  • Then add the eggs one by one, continuing to beat, then add the flour mixture. Mix well.
  • Then add the milk and liquid vanilla. Your dough should be smooth.
  • Mash the bananas coarsely with a fork, add them to the batter. Mix gently and finally add the chocolate chips.
  • Pour the mixture into the previously buttered and floured mold and bake for 1 hour. Check that the cake is cooked by inserting the blade of a knife into it. It should come out dry.
  • Leave to cool for fifteen minutes before unmolding.
