Banana Bread
Ingredients (for a 30x11 cake)
- 90 g of blond spent grain flour
- 210 g of wheat flour
- 150 g of soft butter
- 150 g of brown sugar
- 2 eggs
- 1 teaspoon baking soda
- 1 packet of baking powder
- 1/2 teaspoon of salt
- 3 very ripe normal bananas
- 150 ml of milk
- 150 g of dark chocolate chips
- 1 tablespoon of vanilla flavoring
Preparation
- Preheat the oven to 160°C (convection heat), otherwise 180°C.
- Butter and flour the cake tin.
- In a bowl, combine the flours, baking soda, baking powder and salt.
- Dice the butter. Mix it with the sugar and whisk until the mixture whitens.
- Then add the eggs one by one, continuing to beat, then add the flour mixture. Mix well.
- Then add the milk and liquid vanilla. Your dough should be smooth.
- Mash the bananas coarsely with a fork, add them to the batter. Mix gently and finally add the chocolate chips.
- Pour the mixture into the previously buttered and floured mold and bake for 1 hour. Check that the cake is cooked by inserting the blade of a knife into it. It should come out dry.
- Leave to cool for fifteen minutes before unmolding.
